Universal has two parks and we split three days between the two. Islands of Adventure had Parker (Flight of Hippogriff) and Avery's (Pterodactyl Flyers) favorite rides. It also had Dr Seuss land which had lots of fun character photo-ops and several water rides in other areas we thankfully brought ponchos for. Carter even witnessed a baby Velociraptor hatch and named it Avery (he checked up on it two days later and baby was doing very well).
Other favorite activities were Mom/Carter getting to meet a dinosaur who snuggled up for a photo opp, all the boys trying Butter Beer for the first time, Carter picking out a magic wand from Ollivander's (where Harry Potter purchased his wand) and Avery getting a trial version wand (Parker picked a stuff Owl instead), and the boys engaging in an epic water battle with a group of kids at the Jurassic play area which they won.
